We need a meals/food discussion, so here it is.

Now, down to business.

What should I have for lunch?

I'll admit my remake of this dish sounds terrible but its alright for a quick snack. A few years ago I was in Colombia and they have this dish with a variety of meats with rice and beans which, unfortunately, I have forgotten the name of. When I arrived home I wanted to recreate it so we had some left over rice in the freezer so I chucked that in the microwave for 1 minute, chucked some Heinz BBQ baked beans in with it for another 1minute and 30secs and then let it cool for 30seconds. -it must be BBQ flavored beans not tomato.
You guys should try it some time and let me know what you think if your game enough =D....no pun intended

A downgraded version of the whopper
Used my leet pastry skillz to whack out a batch of shortbread. Baking right now!
Gunna make some pizzas tonight using, pita bread flour (ATAR flour), with some roast pumpkin, olives, onion, basile, fetta, mozzarella, and Christmas ham. Then cooked in the BBQ *_* *_* *_*

The pie I made a few weeks back. It took a LOOOONG time (I started at 2:30pm, finally ate at 7:30pm) but it's definitely, DEFINITELY, worth it.

Process:

1. Put 2 tablespoons of olive oil, half a stick of butter, 3 sprigs of rosemary, 3 sprigs of fresh thyme (leaves picked), and 3 large bay leaves into a casserole pan on high heat.

2. Roughly chop 3 red onions and throw them in.

3. Throw in 1kg of diced shin beef (I used rump but it's not ideal as it takes longer to soften, still fine though if you can't find shin) along with a few bones (heavy on the marrow) into the pot.

4. Add in some pinches of sea salt and pepper.

5. Mix well and cook for 10 minutes. Stir it.

6. Add in 2 tablespoons of tomato puree, 400ml of Stout beer (Guinness is fine). Stir until the smell is orgasmic and everything in the pan is covered.

7. Turn the heat down as low as you can. Cook for 1 hour with lid on. Stir every now and then.

8. At the end of the hour, throw in 140g of pearl barley, stir in and simmer for another hour with the lid on.

9. At the end of that hour, stir well and let it simmer for a further 30 minutes without the lid on. Stir until gravy is thick and the meat shreds easily in your fingers.

10. Get some paper towel and lightly brush it over the top of the stew to extract excess oil (THIS IS IMPORTANT!). Do it as many times as you need to, until all obvious oil is taken off the top.

11. Stir in 3 teaspoons English mustard and 3 tablespoons Worcestershire sauce

12. Mix in 100g of Cheddar cheese

13. Let it simmer on VERY LOW, or, if perfect, let it sit and cool while you make the pastry.

14. Put 300g plain flour, 100g Atora shredded suet and 100g of butter in a bowl. Throw in 1-2 pinch's of salt.

15. Mix it all together until its flaky and rough.

16. Add in 125ml of cold water and make sure it is fully dissolved into the rough batter.

17. Roll the dough up into a ball, wrap in gladwrap and put it in the fridge.

18. Pre-heat oven to 180 degrees.

19. Ditch the bones from the stew, and pour the stew into a pie dish (approx. 24 x 30cm, 4cm deep. Basic oven dish will do I guess.

20. Beat an egg and rub the yolk along the edges of the dish.

21. On a clean, flat surface, spread out some flour. Use the rolling pin to create a cover for the pie from the dough you put in the fridge earlier. No more than 1cm thick, and a bit bigger than the pie dish itself.

22. Place the dough over the top of the meat and carefully remove any excess dough (or decorate as you wish).

23. Egg wash the top of the dough with the egg yolk you beat earlier, and then cook the pie in the oven on the lower shelf for 45-50 minutes, or until golden.

Enjoy! Well worth the effort.

Which is what this does :P

Alternatively, make small pies and freeze them.
That won't make it past the third day with me =/

I once made a batch of casserole that lasted me a week and a half. I just left the pot (more like a vat :P ) in the fridge, and ladled it into a bowl of rice whenever I was hungry. Most delicious week of my life.

Yeah, it's very hard to resist. I had some at MMGN HQ :P

...and hopefully a sauce of sorts.
We had a huge shepherds pie that lasted about 5 days in our fridge. About the longest anything (open) has ever lasted in there.

Cooking is a group experience in my opinion, even if the other people aren't even helping, just having someone there to help pass the time and enjoy the meal with you makes all the more rewarding.
